What is better than a cup of hot chocolate? Not much… So with all the major changes in my life, especially the fact that sugar and artificial sweeteners are now gone, how do I enjoy this favorite and comforting drink?
I experimented and came up with a wonderful recipe. Not only is is creamy and silky smooth but it gives you a dose of healthy fats to boot – so it’s a delicious and HEALTHY hot chocolate! Try it out for yourself and experiment more. I do want to try coconut oil (in place of butter) but I’m currently out since I use it all in my salve.
For a single serving:
I pour enough organic whole milk to fill a medium sized mug to about 2/3 to 3/4 full. Then I put it in a small pot and warm it up on the stove. I add in a splash of vanilla extract, 2-3 tsp unsweetened cocoa powder, a half dropperful of Stevia extract and 1 Tbsp of unsalted Kerrygold (or other grassfeed) butter. Adding the butter makes it super creamy and tasty and that is how the healthy fat is added. I whisk briskly for a few minutes until it’s hot and the butter is melted.
You can try it with whatever fat you want such as coconut oil (my next experiment). You can also adjust the amounts of the ingredients to suit your own tastes. I think I might start adding more cocoa powder, especially with the butter now added. Add mint or any other flavor you can think of, so long as it is natural! I’ll also be adding the Kerrygold butter to my coffee in the morning as well to see how that goes. I have talked via the internet with people that do it and love it!

NOTE: I have to keep a stirring spoon either in the mug or close by and stir before sipping. There is a film that seems to form on the top if it sits too long (I assume the top is cooling allowing the butter to solidify again, but that is only a guess, don’t quote me on it).






Another note: I do want to make the switch to raw milk… so for you raw milk consumers out there, if you try this, let me know how it is… I would venture to say that if your milk is NOT skimmed, then obviously adding butter would be moot.
